Coconut mango truffles

Ingredients

½ Cup dried mango, chopped + 1 Tsp

½ Cup shredded coconut

¼ Cup yogurt

1 Tbsp maple syrup

2 Tbsp coconut flour

1 Tbsp coconut oil, melted

½ Cup Dark chocolate


Instructions

1. In a food processor add dried mango, shredded coconut, yogurt, maple syrup, coconut flour and oil. Process until well incorporated

2. Evenly spread the mixture on a lined baking sheet (1.5cm height), press well and leave in the freezer for an hour

3. Melt the chocolate in a water bath. Remove the mixture from the freezer and cut into 1.5cm squares. Cover with chocolate

4. Place on a lined baking sheet and sprinkle with chopped mango

5. Put in the fridge to harden for at least 1 hour
