Ingredients Salad ½ Cup white quinoa 1 ½ Cup water 3 Pieces dried mango, chopped + more for garnish 2 Spring onions, chopped ½ Avocado, sliced ¼ Cup green olives, pitted and sliced ½ Cucumber ½ Cup sweet corn, cooked ¼ Cup fresh dill, chopped Salt and pepper to taste Dressing ¼ Cup creamy yogurt 1 Tsp mustard 1 Tsp dried dill Instructions: 1. Place quinoa and water in a medium saucepan and bring to a boil. Once boiling, reduce heat to simmer, cover and let it cook for 15 minutes. Remove from heat after 15 minutes and place quinoa in a large bowl to cool. 2. Slice the cucumber and add to the quinoa. Add the remaining ingredients and stir well. 3. In a small bowl, add all ingredients for the dressing. Stir until well mixed. 4. Add the dressing to the salad and top with more dried mango.
