Ingredients
Dry Ingredients
1 Cup rolled oats
1/2 Cup almond flour
3 Tbsp roasted and salted almonds, chopped
¼ Cup oat flour
½ Cup diced dried mango
Wet Ingredients
3 Tbsp melted coconut oil
¼ Cup almond butter
3 Tbsp coconut sugar
4 Tbsp pure maple syrup
1 Tsp pure vanilla extract
1 egg
For topping
¼ Cup white chocolate, melted
¼ Cup Dried mango, cubed
Instructions
1. Preheat oven to 175°C. Line a cookie sheet with parchment paper.
2. In a large bowl, whisk together all of the dry ingredients
3. In a medium bowl, whisk together all of the wet ingredients
4. Pour the wet mixture over the dry mixture. Mix well. Scoop and drop cookie dough balls onto the prepared baking sheet
5. Bake for 10-15 mins or until golden brown. Place the cookies on a cooling rack. Allow to cool for 1 hour before topping
6. Top with melted white chocolate and diced mango
