Dried mango and coconut energy bites

These delicious dried mango bites look and taste of sunshine.



Recipe


Ingredients

  • 150 grams (approx. 10 slices) Dried Mango

  • 2 Medjool Dates

  • 40 grams Macadamia Nuts

  • 120 grams Cashew Nuts

  • 55 grams Desiccated Coconut

  • 1 tbsp Coconut Oil

  • 1/4 tsp Sea Salt

  • 1 lime – Zest and 1 tsp Lime Juice

  • Optional: Desiccated Coconut to roll the bites in


How to make

  • Put the mango slices and dates in a small bowl and cover with warm water for 1 min

  • Add the nuts to a food processor and process into a crumb like texture. Remove from the food processor and set aside

  • Add the mango slices and dates to the food processor and process into small peas sized bits

  • Add the nuts back in along with the shredded coconut, sea salt, coconut oil, lime zest and lime juice and process until the mixture is blended and holding its shape when pressed together

  • Using your hands, form the mixture into bite sized balls and if using roll them in shredded coconut
